The holidays often bring the need for some comfort food. It’s also basically the only time of year I eat pies. So combining the two ideas, comfort food and pie, into one and what do you get? Apple Pie!
Apple Pie Cookies
Recipe from Oh, Bite It!
1 can of apple pie filling
1 box of frozen pie crust
I was excited to make these cookies because they seemed so easy! Thanks to all the pre-made ingredients. I will say they were indeed easy, but took longer than I expected. The short story is all you do is put caramel on one of the crusts, top it with the filling, put the other crust on top and cut. It’s THAT easy! Well, yes and no. There’s a bit more to it, but it’s very worth it!
Start the process by rolling out one of the pie crusts to make it just a bit larger. Make sure to sprinkle some flour out first and on the top so it doesn’t stick. Then spread a thin layer of caramel on the whole circle.
So now you’re done with the quick easy part of the recipe. This next part is easy, too, just a bit more time consuming.
In simple terms you make this my intertwining the strips. I don’t trust myself to adequately explain it. So just use your imagination.
Using the cookie cutter (or a measuring cup), try to get as many cookies out of your circle you’ve created. Place the cookies on a greased cookie sheet.
Crack the egg in a small bowl and give it a quick stir. Wipe some of the egg on top of the cookies. This will help get that golden brown color in the end. Top each one with some mixed cinnamon, sugar, and nutmeg.
Cook the cookies at 350 degrees for about 20 minutes or until they are golden brown.
Like I said, these Apple Pie Cookies took a bit more effort than I originally thought, but based on the feedback I got, they are totally worth it! All I needed was vanilla ice cream. I would have been the icing on the cake… Except more like the topping on the pie?
